CHIMICHURRI SAUCE
WITH TOMAHAWK STEAK

I have featured the chimichurri sauce in this post as it is a great accompaniment to any steak not to mention other things.

 

Instead of using red wine vinegar as most recipes call for, I use red verjus and some lemon curd.  Of course you could stick with the red wine vinegar.  In addition, I boil the garlic which helps cut the sharpness and doesn't leave a strong aftertaste.

 

tomahawk steak is a luxurious splurge. It is both dramatic and delicious. Of course, given its size, grilling is ideal. However, here I give you a way to cook it on the stove and in the oven.

The rub was inspired by Eric Ripert. I have added Sichuan peppercorns which I was inspired to think of by Gordon Ramsey.

Components

  • tomahawk steak or any steak you like

  • rub for steak

  • chimichurri sauce

​

Ingredients for chimichurri

  • 1 shallot finely chopped

  • 1 freso or jalapeno pepper, seeds removed, finely chopped

  • 3-4 whole cloves, boiled for a few minutes, then peeled and finely chopped

  • 1/2 cup red verjus

  • 1/2 tsp (or more lemon curd)* or 1 tbsp fresh lemon juice

  • 3/4 cup flat leaf parsley finely chopped

  • 3/4 cup cilantro finely chopped

  • 1 tbsp oregano buds crushed or 2 tbsp finely chopped oregano

  • 1 tsp or more sea salt (I prefer Maldon)

  • a few pinches of black urfa chili**

  • 3/4 cup good extra virgin olive oil

  • Freshly ground black pepper

Combine all ingredients. OR instead of chopping, place in blender or food processor and combine leaving it a bit chunky.

Ingredients for rub

  • 1 tbsp coriander seeds

  • 1 tbsp cumin seed

  • 1 tbsp black peppercorns

  • 1/2 tbsp sichuan peppercorns

  • 1 tbsp sea salt flakes

​

Place all ingredients in mortar and pestle and grind until fairly fine.

​

Ingredients for steak

  • steak

  • rub

  • avocado oil

  • butter

​

Preheat oven to 375 convection or 400 regular.

​

Ideally you want to take the steak out of the fridge about 1/2 hour prior to cooking.

​

Rub steak all over, even the sides, generously with rub.

​

Heat oil and butter in oven proof pan until hot.  If cooking a tomahawk, the bone will not fit in pan.  Not to worry, it will cook in oven.

​

Sear steak on all sides.  A few minutes on each side until nicely browned.  Also hold bone and sear the sides as best as possible.  Place in oven for 5 - 10 minutes.  I like to check the meat temperature starting at about 5 minutes. You will also want to flip steak in the oven at least once so it cooks evenly. 

 

For medium rare you will want the temperature to be 135F. Allow to rest for 10 minutes.

Slice and serve with chimichurri sauce.
